Artisanal charcuterie and “house” specialties
On July 23, 2009, Longeole became the second Geneva name registered in the federal AOP-PGI register, after Cardon thorny in 2003. Longeole belongs to Geneva’s culinary heritage and is firmly anchored in the culture of the people of Geneva. This certification testifies to the desire to promote and develop local, high-quality production and processing that meets consumer requirements.
Longeole is a raw charcuterie prepared with pork meat and seasoned with an essential ingredient: fennel seeds. This creamy sausage gives off an aroma and an aromatic taste of meat and spices.
